The best news you’ll schmear this week: PopUp Bagels, a Connecticut-based, celeb-backed bagel franchise, is slated to open up shop on Lovers Lane in Dallas this Friday.
Founded by Adam Goldberg in Connecticut, PopUp Bagels is a boutique bagel franchise based on simplicity. While sandwiches and eccentric plays on the bagel have become the norm at bagel shops, PopUp Bagels instead serves straightforward, well-crafted bagels served hot and whole from the oven – encouraging patrons to Grip, Rip, and Dip.
As of April 2026, PopUp Bagels has 30 stores across 12 states from New York to Florida. Following a partnership with Lone Star Bagels, PopUp Bagels is mapping out 12 locations in Texas with Dallas first on the list.

The franchise serves a short menu of plain, everything, poppy seed, salt, and sesame bagels with select schmear options. In addition to weekly specials – this week include cake batter cream cheese and vanilla berry butter – PopUp Bagels offers a simple selection of salted butter, plain cream cheese, and scallion cream cheese.
As far as extras, PopUp Bagels offers smoked salmon available in either 4 or 8 oz. And that’s all.
Beverages available at PopUp Bagels include Natalie’s Orange Juice, Lemonade, and Strawberry Lemonade. Hot Drip Coffee, La Colombe Cold Brew, and PopUp Bagels Water is also available.
While the franchise’s is slogan is “not famous but known” – that is not the case for its investors. Among the star-studded list of PopUp Bagel investors include Paul Rudd, Michael Phelps, Michael Strahan, Patrick Schwarzenegger, and Watt brothers, J.J. and T.J.
PopUp Bagels opens at 5450 W Lovers Lane Set 143 in Dallas on Friday, April 24. Here, PopUp will host a grand opening celebration from 8 am – 11 am. Featured festivities include a live DJ, complimentary bagels, giveaways, and more.

In celebration of its Dallas opening, PopUp Bagels will feature a special collaboration with WingStop. For a limited time, the bagel shop will offer a Wingstop-inspired lemon-pepper schmear.
Unlike the name suggests, the PopUp Bagel shop in Dallas is a permanent location. Once running, the bagel shop will be open from 8 am to 4 pm daily. Friday and beyond, the bagel shop is likely to draw crowds. As such, we strongly encouraged aspiring eaters to order in advance.
