Michelin has arrived in Texas. In a ceremony held November 11, Michelin honored 15 restaurants in the Lonestar State with One Star ratings, also giving its newly introduced Green Stars to two restaurants – both located in Austin.
The Texas capital came away with the most Michelin awards including the two aforementioned Green Stars and seven One Stars to Austin restaurants. The company designated six One Star restaurants in Houston, one in San Antonio, and one Michelin Star restaurant in Dallas: Tatsu in Deep Ellum.
Housed inside the historic Continental Gin Building in Deep Ellum, Tatsu is an intimate Omakase-style sushi restaurant head by Executive Chef and Owner Tatsuya Sekiguchi.
The Michelin Star restaurant in Dallas has long been a hot ticket, being one of the city’s hardest places to score a reservation. Containing only 10 counter seats, Tatsu hosts two seatings – taking about one hour and 45 minutes each – five nights a week. In its write-up of Tatsu, Michelin states that “perseverance will be rewarded”.
Here’s what else Michelin had to say about Tatsu:
“The omakase contains around 14 pieces and follows the Edomae tradition, so expect fish that gets steadily stronger in flavor as dinner progresses,” Michelin writes.
“You might start with Alaskan sockeye salmon, followed by Spanish tuna and delicious uni from Hokkaido and end with eel from Maine. The rice is also from Hokkaido and chef Tatsuya Sekiguchi’s deft, practiced movements ensure each piece is a perfect creation; he’ll even alter the size if you so wish. All guests are served together, so do arrive on time.”
Tastu is located at 3309 Elm St Ste 120 in Deep Ellum Dallas. Tatsu features two seatings a day at 5:30 pm and 7:45 pm from Tuesday through Saturday. Interested parties can book seatings through the restaurant’s website here.
