Heads up, Dallas. A stunning new rooftop destination is coming to town. Based at the One Michelin Key Global Ambassador hotel in Phoenix, Arizona, Théa Mediterranean Rooftop is an award-winning concept that plans to open a second location in Dallas, Texas.
Following the flagship restaurant’s opening in December 2023, CN Traveler named Thea Mediterranean Rooftop was named one of the “world’s best new hotel restaurants“. Specifically, the publication called the rooftop a “truly transporting experience”, highlighting its menu of kofta skewers, Moroccan roasted carrots, and “Goddess of all Dips” platter.
The rooftop is a concept by Sam Fox‘s Author & Edit Hospitality group. In addition to Théa Phoenix, the group’s projects include The Global Ambassador and The Twelve Thirty Club in Nashville. Fox, himself, was also a key figure in bringing Doughbird, Flower Child, The Henry, and Culinary Dropout to Dallas.

Its menu features Mediterranean-inspired shared plates, including house-made pastas and mezze. Signature items include the aforementioned “Goddess of all Dips” multi-dip spread served with fresh breads, Spaghetti alla Nerano, and a mixed grill platter. Expanding from its original Phoenix location, the Dallas outpost will also introduce a health-focused lunch menu.
Théa’s cocktail program focuses on house-made ingredients and classic techniques, highlighted by a “Spritz Parade” trio. The bar also features an extensive rosé collection, including RUMOR from Provence. In the evening, the venue will stage live DJs.
“I’ve operated restaurants in Dallas for over a decade, and throughout that time the city has come to feel like a second home,” said Fox, who helped bring The Henry, Culinary Dropout, Flower Child and Doughbird to Dallas.

“Opening restaurants here has allowed us to build meaningful relationships within the community, which makes expanding in this market especially significant. Knox Street is a natural fit for Théa. What makes this location especially exciting is the daytime experience. We see an opportunity to create a welcoming destination for a healthy, Mediterranean-inspired lunch that feels thoughtful and approachable, then transitions seamlessly into dinner and late night.”
Designed by Charles & Co., Thea Dallas will overlook the Katy Trail at Knox Street development. The restaurant will feature 8,600 square feet of indoor space as well as 3,00 square feet of outdoor patio space. The group aims to open Thea Mediterranean Rooftop in Dallas in early 2027.
